I try to vary our recipes from low-carb, vegetarian, paleo, and just high protein in our blog to cater to different diets. Although the one thing I stick with is having at least 75% ingredients to being natural. Because lets face if we wanted to have something full perspectives, its easier to just buy it.
We are both fans of lemon flavored desserts, as seen in this one BCAA Lemon Mug Cake recipe post. Therefore, this low-carb lemon bar recipes is great for those trying to keep it nice and tight for the summer.
Crust Ingredients:
- 1 cup of almond flour
- 1/2 cup of coconut oil
- vanilla extract
- 1/4 cup of non calorie sweetener
- 1/8 tsp salt
Top Ingredient:
- 3 eggs
- 1 egg yolk
- 1/2 cup lemon juice
- 2-3 tbsp lemon zest
- 1/2 cup non calorie sweetener
- 1/3 cup almond flour
Preheat the oven at 350 degrees F. In a medium bowl blend the crust ingredients and press into the bottom of an baking pan. Use the fork to break any clumps. Bake for 10-15 mins until firm and golden.
In the meantime, in a separate bowl whisk together the sugar and flour. Whisk in the eggs, yolk, lemon juice and zest. Let the crust cool and pour mixture on top. Bake for additional 15-20 minutes till no longer runny. Allow to cool completely before cutting into it. Add powder sugar for a decorative feel. Enjoy!
