If we aren’t sick of everything pumpkin, then there are so many great recipes to check out. Some great pumpkin recipes I’m checking are pumpkin coffee bread by PaleoOMG and pumpkin cheesecake bar by Kara Corey. However, the recipe I wanted to make was a pumpkin rice pudding recipe. Rice pudding is made of rice mixed with water or milk and with added cinnamon and raisins. Its a popular recipe found all over the world and it’s one of my husbands favorite things. So naturally, I wanted to give it a try, with a fall twist, adding in the pumpkin. Check out this delicious pumpkin rice pudding recipe.
To make this you’ll need:
- 1 cup of aromatic rice
- 2 cups of water
- 4 cups of almond milk
- 2 tsp of vanilla extract
- 1/3 of cane sugar
- 1/2 can of pumpkin
- 2 tsp of cinnimon
- 1 tsp of nutmeg
- 1/3 cup of raisins
Start by boiling the water in the sauce pan. Once the water begins to boil, add the rice, and reduce the heat to let the rice simmer for 7 minutes. Then drain the rice and in the same sauce pan, boil the milk. Once the milk starts to boil, add back the rice and the vanilla extract. Reduce the heat to a simmer, and let the mixture sit for 30-45 minutes, stirring occasionally. Once the rice has been absorbed my the milk, mix in the rest of the ingredients and remove from the heat. Preheat the oven to 350 degrees. Prep an 8×8 baking pan and pour in the mixture. Bake for 30 minutes and top with walnuts or added cinnamon.
