If your looking for something to satisfy your pasta craving? That has protein, all-natural, and above all it taste pretty good? Try making this easy chicken almond summer pasta. It’s great addition to summer BBQ because it’s not only delicious, but it’s nice to include one healthy item to the menu.
Green Summer Pasta Ingredients:
2 large avocado
1/4 cup greek yogurt (or almond yogurt)
1 tbsp of mince garlic
1/2 cup basil
1 pinch of salt
8 oz gluten free rice pasta
1 cup cherry tomato
1/2 cup almond flakes
1 lb almond breaded cubed chicken (recipe below)
1 tsp chili flakes
Step 1: Cook noodles as instructed and let them cool off
Step 2: Mix in a blender the greek yogurt, mince garlic, salt, basil, lemon juice and the avocados
Step 3: Combine the mixture and the pasta in large bowl
Step 4: Then add the tomato, asparagus, chicken cube, and almond flakes
Step 5: For garnish add the chili flakes
Almond Bread Cubed Chicken
Ingredients:
1 lbs of chicken
1/2 cup almond flour
1/4 grated parmesan cheese
1/2 tsp of garlic powder
1/8 tbs paprika
1 tsp black pepper
2 egg lightly beaten
Step 1: Preheat the oven for 375F 20-25 Mins
Step 2. Mix together in bowl the almond flour, parmesan cheese, pepper, garlic powder, and paprika
Step 3. Cut chicken into 1-2″ cubes
Step 4: Drench each chicken with the beaten egg and then coat with almond flour mix
Step 5: Bake for 20-25 minutes and cool off on rack
